Magazine Madness....Buying a New Bathing Suit and a Few Thoughts from RedBook Magazine....

I am off to the beach in a couple of weeks so my mind has been on bathing suits.  Yes I need a new one but hate to try them on.  In that regard I know I am not alone.

I was reading about "body confidence in my Redbook Magazine July 2015 issue.  Here are a few things they had to say....
This is how you feel before you get into a swimsuit:
56% ACK!! I don't feel confident.
40% Hooray! I'm going to the beach!
4%Yay!  I get to show my figure off.

So where do I fit in that mix.  No I don't feel overly confident but I really don't care all that much.
Yes, hooray I do get to go to the beach.  As far as showing my body off .  Definitely not the focus of  my beach trip:-)

I decided to look for bathing suits on Amazon because I get free shipping on most of their items.
I really like this one.  
I like the high neck line and the sportiness of this suit

You must have a hat in the summer sun...I thought this one was kinda cute..

I would love to get them all but I must consider my budget.....Tough decision.
I choose the cute one with the skirt and I also ordered the hat.
I already have a cover that is somewhat similar.

I agree Redbook.  My body still works so I am happy:-)

Yummy Drinks to Try...."Caribbean Pineapple" as found on Pinterest

I love anything that reminds me of the islands.  Coconut and pineapple are a sure bet to bring back  my memories of white sand beaches and the warm turquoise waters of the caribbean.  This is one of the easiest drinks you will ever make.  You can make it as strong or as mild as you like.  I decided to follow the recipe, at least initially:-)

I studied the recipe...

A delicious recipe for Caribbean Pineapple, with Malibu ® coconut rum and pineapple juice.  
1 part Malibu ® coconut rum
3 parts pineapple juice

Pour ingredients over ice in an old-fashioned glass. Garnish with a maraschino cherry, and serve.
This drink is most often served in a Old-Fashioned Glass

Doesn't get any easier then this.  Easy, tasty, and refreshing.

So if you want to escape to the islands I suggest you give this Yummy Drink a try. 
 Just sit in the sun, close your eyes and take a sip.

Recipe Review, Shrimp Scampi Linguine by Rasa Malaysa as found on Pinterest.

I love shrimp.  I guess you could say I am on a shrimp kick.  Went out with Erica for lunch last week and had a salad with shrimp.  Had dinner with Cindy last night and had shrimp kabobs...yummy.  I love the texture and the taste.  Since I had shrimp on my mind I decided to make a new recipe with shrimp. 

I studied the recipe that I found on Pinterest by Rasa Malaysia

Serves 4 | Prep Time: 15 Minutes | Cook Time: 5 Minutes
4 servings linguine, for 4 people
1 lb shrimp, peeled and deveined
1/4 teaspoon cayenne pepper
2 oz unsalted butter (1/2 stick)
1 1/2 tablespoon olive oil
5 cloves garlic, peeled and minced
5 tablespoons white wine
6 cherry tomatoes, cut into halves
Salt, to taste
1/4 teaspoon sugar
Squirts of lemon juice
1/2 heaping teaspoon freshly ground black pepper
Chopped parsley
Shaved Parmigiano Reggiano
Heat up a pot of water, cook the linguine according to the 
instructions on the package.
Sprinkle the cayenne pepper to the shrimp. Set aside.
Heat up a saute pan and add the butter. When the butter melts, 
add the olive oil. Stir in the garlic, lightly saute until aromatic before 
adding the shrimp into the pan. 
Saute the shrimp until half cooked and then add the white wine,
 salt, and sugar. Add the cherry tomatoes and 
linguine into the pot, stir to combine well.
When the shrimp is completely cooked, add a few squirts of the lemon 
juice, black pepper, and chopped parsley to the linguine, 
toss to mix well, dish out and serve immediately with 
some shaved Parmigiano Reggiano cheese.
I gathered my ingredients and started cooking.....

I would give this an
8/10 on my scale.
For me the cheese
not necessary. But
other then that it was
delicious and easy.

Recipe Review...."Brownie Cookies"

I found a recipe I wanted to try on Pinterest. Brownie Cookies from Pure and Yummy I studied the recipe and gathered my ingredients.....

Brownie Cookies

½ cup butter
4 (1 ounce) squares unsweetened chocolate, chopped
3 cups (18 ounces) semisweet chocolate chips, divided
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
4 large eggs
1 ½ cups sugar
2 teaspoons vanilla extract

Combine butter, unsweetened chocolate, and 1 ½ cups chocolate chips in a large heavy saucepan. Cook over low heat, stirring constantly, until butter and chocolate melt; let cool.

Combine flour, baking powder, and salt in a small bowl, set aside.

Beat eggs, sugar and vanilla at medium speed with an electric mixer. Gradually add dry ingredients to egg mixture, beating well. Then add the chocolate mixture and beat well. Stir in remaning 1 ½ cups chocolate chips.

Scoop dough onto baking sheets 1 inch appart. Bake at 350 degrees for 10 minutes. Cool slightly on baking sheets; remove to wire racks to cool completely.

 So what do I give this cookie on my baking scale?  10/10!  Soft yummy cookie.  Everyone at the office wanted the recipe, that is always a good sign.  I will be making these again.

Caleb and Nana's Adventures…"Discover the Dinosaurs"

Back in early March Caleb and I decided to go on an adventure.  We were thrilled to have Steph, Caleb's mom come along too.  They had been advertising "Discover the Dinosaurs" on many of the local media outlets.  Sounded like a perfect adventure for Caleb who loves and seems to know the names of all the popular Dinos.
So off we went on our adventure….

We were greeted by this scary looking bloke with the big teeth.  It took Caleb a while to warm up to him.

After spending some time meeting the dinosaurs, bouncing in the many bounce houses, and then even riding a scary moving T-Rex we enjoyed hotdogs and french fries with a Dino Friend.

Monday Morning Motivation…."Sing in the lifeboats"

"Life is a shipwreck but we must not forget to sing in the lifeboats"
I did not appreciate the deep meaning behind Voltaire's quote until I went through a major life crisis.  In the beginning of my crisis I did not sing in the lifeboat. I wailed.  I sought escape, I spent each moment in dread, mourning and fear.  I gave my life to God as a child and then again as a teenager in a small church up the street from my home.  I lost sight of God in the early days of my current crisis but I still called out to him.  I prayed and studied the Psalms.  Each day I got a little stronger.  Am I ashamed of my reaction in the early days of this trial in my life?  No.  I am human and God knows that.  He has helped me grow through it and to even thrive.  
So how do I sing in the lifeboat.  I literally sing when I am listening to Christian music.  My soul sings when I spend time with my family.  My heart sings when I take time to look at the beauty of God's creation that surrounds us even in our pain. 

"What am I to do? I will pray with my spirit, but I will pray with my mind also; 

I will sing praise with my spirit, but I will sing with my mind also."
