Pinterest Foodies: Lemon Rosemary Chicken with Zucchini and Cherry Tomatoes

I found this  recipe, Lemon Rosemary Chicken with Zucchini and Cherry Tomatoes, on Pinterest.

Lemon-Rosemary Chicken with Zucchini and Cherry Tomatoes



Ingredients Serves 2

2 tbsp oil
2 boneless, skinless chicken breast
12 lemon
2 clove garlic
1 sprig fresh rosemary
2 sprig thyme
8 oz zucchini
4 oz cherry tomato
14 cup chicken stock

Directions

  1. Heat oil in skillet over medium-high heat. Add chicken and cook until lightly browned. Squeeze lemon juice into pan and add garlic and herbs. Cook for about 1 minute.
  2. Remove chicken, keep warm and add zucchini and tomatoes to pan. Saute just until heated through and slighly soft; remove from pan. Add chicken stock to pan and cook, scraping up any browned bits, until hot and slighly reduced. Add chicken, zucchini and tomatoes back to pan and just heat through. Season to taste with salt and pepper and serve immediately.

It was a very tasty and easy recipe.  I suggest you give it a try
I think I will give it 9/10 on my cooking scale.

Fashion Friday "My Version"


I love this look.  I love the boots and the vest.  I decided to shop my closet and shop the sale racks at Belk's to attempt to duplicate this look.  Here goes. Wish me luck….
First shop your closet.  Great way to save money.  I already had the stripped shirt. It even has little black elbow patches.  I bought that on sale at Belk's weeks ago.  Then shop the sale racks. I checked out every sale rack at Belk's to find the vest.  Got a good deal, on sale and I had a coupon:-)
 The scarf I bought from a patient.  Her niece developed this design for her college.  Don't ask me what school, I don't remember.  Down south somewhere.  I wonder if my UNC fan daughters will be upset if I wear it??????:-)  I don't usually wear scarfs so I will need to Google how to tie the scarf.
 I already have 2 pair of boots.  Both are "Vegan" leather, but thats ok.  
I won't tell if you don't:-)
I know I need to become a Belk's affiliate but in the interim I will try to find some of these items on Amazon….
Remember shop your closet first and then the sale racks.

Pinterest Foodies….Apple Walnut Cranberry Salad from Flavor Mosaic on Pinterest

Searching Pinterest I came across this tempting salad from the Flavor Mosaic.  I had to work all day but thought this would be a quick and easy meal to whip up.  I studied the recipe and after work stopped by Harris Teeter to pick up the supplies….(My comments will appear in red)
Apple Walnut Cranberry Salad

Ingredients

    Salad
    • 1 bag 50% blend mixed greens and spinach, washed
    • 2 green apples, sliced
    • ⅓ cup dried cranberries
    • ½ cup gorgonzola cheese, crumbled (I used Blue Cheese)
    • ½ cup walnut pieces

      Apple Cider Vinaigrette
      • ¼ cup olive oil
      • ¼ cup apple cider vinegar
      • ½ teaspoon dijon mustard
      • ¼ teaspoon garlic powder
      • ¼ teaspoon dried oregano
      • ¼ teaspoon dried basil
      • ¼ teaspoon freshly ground black pepper
      • I also added about 2 tsp of sugar and also bought a piece of ham to the mix.

        Instructions
        1. In a large bowl, toss together all the salad ingredients.
        2. In a small bowl, whisk together all the vinaigrette ingredients. Drizzle vinaigrette over the salad and toss. Serve immediately.

        I gathered my ingredients and started putting things together.



        I love to wisk my dressing in my new pottery bowl:-)

        So what would I rate this lovely salad?  I would give it a 8/10 on my food scale.  Yummy and easy!

        Pinterest Finds: Home and Garden….Front Porch in the Fall

        ..
        Now that Halloween is over it is time to remove the ghosts and goblins from the front porch and go with more of a fall theme for Thanksgiving.  After searching through Pinterest I found this cute little basket idea.  This would look great on my front porch.  So I need to look for a basket, a few pumpkins, some fall leaves, and a nice welcome mat.

        On this Pinterest photo I like the wreath and the chair.  I have a white rocker that would look nice with a festive pillow.  Ok lets get shopping…..


        Now it is my turn to take a look at the photos, check out my storage closet to see what I already have and then get my porch ready for Thanksgiving.

        Pinterest My Decorating Dreams….Bathroom by The Tile Shop

        As I was scanning through Pinterest I came across this lovely photo that was taken from the Tile Shop website.  I was looking at it thinking about how much work my bathroom needs.  As my realtor daughter would say "it is dated".  Yes it is dated and much worse.  The floors are old and my sad attempt at trying to paint the old flooring is a painful reminder that I do not have decorating skills.  I have an old built in shower and tub combo.There are a few upgrades I could make though that I don't think would cost tons if money.  My goal in the future would be to keep the insert but add new fixtures.  I would change out the vanity and the mirror and get new lighting.  I would also have to splurge for new flooring and window treatments.  I think I can do that, hopefully in the near future.

        What I like about it…
        The mirror, although I don't think I would want the lighting housed in the mirror. I would put the lighting above.
        Love the vanity and sink.  Also the dark fixtures.  Flooring is nice too…
